Pink Lady Apple schnapps cocktails for warm, spring weather.

Did you know the versatile Pink Lady, Australia’s own creation and one of the sweetest of all apples, forms the base spirit for many of your favourite schnapps?

Butterscotch, Baked Apple, Devil’s Tongue, Limoncello, Coffee… all these schnapps depend on the subtle, luscious spirit of Batlow-grown Pink Ladies to lend them the depth of flavour and sweetness common to each.

We source our apples from local producers in Batlow, on the northern edge of Kosciuszko National Park. Rather than letting imperfect apples go to waste, those that aren’t chosen by the large supermarket chains can find a second life in cider and schnapps.

Orchard Spritz
The Orchard Spritz combines Pink Lady apple schnapps, vodka, and ginger ale for a refreshing, sweet-tart drink.

Ingredients:
• 45 ml Wildbrumby Pink Lady Apple Schnapps
• 30 ml Kosciuszko Vodka
• 15 ml Fresh lemon juice
• 1 dash Simple syrup
• Fever-Tree Ginger Ale (to top up)
• Slices of Pink Lady apple and fresh mint (for garnish)

To Make It:
Fill a large wine glass with ice. Add the apple schnapps, vodka, lemon juice, and simple syrup. Stir gently to mix the ingredients. Top up the glass with ginger ale. Garnish with fresh mint and Pink Lady apple slices.


Kissed by a Lady
A sweet, floral delight to lighten your mood.

Ingredients:
• 30ml Pink Lady Apple Schnapps
• 30ml Kosciuszko Vodka
• 30ml apple juice
• 15ml *Hibiscus Flower scrub
• White or Dark Chocolate to garnish

To Make It:
Fill a rocks glass with ice. Add all ingredients and stir gently. Garnish with a chocolate pop or serve with white or dark chocolate on the side.

*Ingredients to make a Hibiscus Flower Scrub:
• 1 cup dried hibiscus flowers
• 1¼ cups filtered water
• 1 cup honey or granulated sugar
• 1 cup apple cider vinegar

To Make It:
In a saucepan, bring the hibiscus flowers and water to boil. Reduce heat to low and let simmer for 7 minutes. Strain liquid into a glass, then stir in the sugar or honey and apple cider vinegar until dissolved, whilst the liquid is still warm. Once cool, store in the fridge.

 


Pink Lady’s Kiss
A simple yet stunning cocktail with a lovely pink hue. It combines the crispness of Wildbrumby Pink Lady Apple Schnapps with a hint of floral notes from elderflower tonic.

Ingredients:
• 30ml Pink Lady Apple Schnapps
• 30ml Rubus Patch Gin
• 20ml Fever-Tree elderflower tonic
• 15ml Honey
• 15ml fresh lime juice
• Apple blossom and/or wedge of lime to garnish

To Make It:
Fill a tumbler with ice and add Wildbrumby Pink Lady Apple Schnapps, Rubus Patch Gin, honey and fresh lime juice. Stir gently to combine ingredients. Top up with elderflower tonic. Garnish with a wedge of lime and an apple blossom (if available).


Lady Bellini
A classy cocktail perfect for celebrations, and delicious with either Pink Lady Apple schnapps or Peach Nectar schnapps!

Ingredients:
• 25 ml Wildbrumby Pink Lady Apple Schnapps
• 130mL of wildbrumby Brut
• Slice of Apple to garnish

To Make It:
Take a fresh apple and slice out a thin wedge, keeping the skin on. Garnish your chilled champagne flute with the apple slice then add wildbrumby Pink Lady Apple Schnapps. Angle the champagne flute on a 45-degree angle and slowly fill the glass with wildbrumby Brut.


Lady in Pink

This Lady in Pink does take a little more work than your average homemade cocktail. They say that the finest apples are at the top of the tree. Similarly, to make the finest Pink Lady Apple schnapps cocktail, though you don’t have to pick the apples yourself (because we’ve done that part) you have to put in a bit of extra effort. It’s worth it.

Ingredients:
• 30ml Pink Lady Apple Schnapps
• 30ml Rubus Patch Gin
• 30ml Rhubarb and Rose Syrup* (or simple syrup)
• One egg white or vegan cocktail foamer
• Dusting of cinnamon

To Make It:
Add Pink Lady Apple Schnapps, Rubus Patch Gin, one egg white, and Rhubarb and Rose Syrup to an ice-filled cocktail shaker (see instructions below for making Rhubarb and Rose Syrup).

Once shaken, strain contents into a martini glass and dust with cinnamon. Drink to your heart’s content.

*Ingredients for Rhubarb and Rose Syrup:
• 2 cups rhubarb, chopped
• 1 cup sugar
• 1 cup water
• 1-2 tbsp dried rose petals (or 1-2 tbsp rose water)
• 1 tbsp lime juice

To Make It:

In a saucepan, combine rhubarb, sugar, and water. Bring to a simmer over medium heat.

Cook for about 15-20 minutes, stirring occasionally, until the rhubarb breaks down and the liquid thickens.

Add the rose petals (or rose water) and lime juice. Stir well and simmer for another 5 minutes.

Remove from heat and strain the mixture through a fine mesh sieve to remove solids.

Let the syrup cool, then transfer it to a bottle or jar. Store in the fridge for up to 2 weeks.
