Host a spring picnic with magical Elderflower liqueur drinks and desserts.

Christmas is just around the corner, and there’s a little magic in the air!

In anticipation, we’ve just bottled something rather special. For the very first time, wildbrumby has released a limited-edition Elderflower Liqueur Schnapps, capturing the delicate floral flavours of spring in the mountains.

And what better excuse to gather your favourite people, roll out a picnic rug and celebrate with some enchanting elderflower cocktails and sweet treats?

A little Bavarian magic in the Snowy Mountains

For our distiller, who grew up in Bavaria, elderflowers bring back fond memories of springtime in Europe.

As soon as the fragrant white blossoms appeared, it was time to make homemade elderflower syrup or dip the delicate flowers into pancake batter and fry them into golden elderflower fritters. Come autumn, the dark elderberries were gathered for jam.

Fast-forward to spring in the Snowy Mountains, where elderflowers bloom around the distillery and across the countryside towards Lake Jindabyne.

For a few magical weeks, these tiny creamy-white blossoms fill the mountain air with their delicate perfume. But blink, and they’re gone!

So when the elderflowers bloom, our distiller gets picking, capturing a little of that fleeting spring magic in a bottle.

This year, we’ve created something new. Unlike our traditional dry Elderflower Schnapps, our brand-new Elderflower Liqueur Schnapps has a softer floral character and gentle sweetness. It’s a beautifully fragrant little number that’s perfect for springtime sipping, cocktails and desserts.

And it’s just the thing for an enchanted spring picnic!

A little sparkle: The classic Hugo Spritz

If there’s one cocktail that captures the spirit of a European spring, it’s the Hugo Spritz.

Originating in the German-speaking region of Northern Italy, this refreshing cocktail combines fragrant elderflower, sparkling wine, fresh mint and lime.

We’ve given it a little Aussie alpine twist with our new Elderflower Liqueur Schnapps and wildbrumby Brut.

Light, floral, bubbly and ridiculously refreshing, it’s the perfect picnic companion.

And to make entertaining a breeze, we’ve put together a Hugo Spritz Cocktail Bundle with the key ingredients for this springtime favourite. Just add fresh mint, lime and a little sunshine!

A spirited spring fling: The Elderflower Sour

For those who fancy something with a little more zing, our Elderflower Sour is another lovely way to enjoy this seasonal schnapps.

The delicate floral sweetness of elderflower pairs beautifully with the bright tang of fresh lime and the botanical notes of our wildbrumby Classic Gin.

It’s a refreshing, sophisticated little number, perfect for a leisurely afternoon with friends.

And with our Christmas Gin coming soon, we’re already dreaming up some rather magical festive combinations. Watch this space!

Sweet floral dreams: Elderflower Strawberries & Cream

Who said schnapps was just for sipping?

For a delightfully simple spring dessert, drizzle a little wildbrumby Elderflower Liqueur Schnapps over fresh strawberries and cream.

The juicy sweetness of strawberries, luscious cream and delicate floral notes of elderflower are a match made in dessert heaven.

No baking, no fuss, just a little alpine indulgence. Almost too lovely to eat. Almost!

A fleeting taste of spring

There’s something rather special about bringing a little Bavarian tradition to life in the Snowy Mountains.

Different mountains, different side of the world, but the same magical springtime ritual of gathering elderflowers and turning them into something delicious.

Our new Elderflower Liqueur Schnapps is lovingly crafted from elderflowers foraged around the Snowy Mountains and Lake Jindabyne, capturing their delicate floral character and gentle sweetness.

But like the flowers themselves, this seasonal release won’t be around for long.

So gather your friends, pack a picnic basket, shake up a little floral magic and make the most of these glorious spring days.

Because some of life’s most magical moments are as fleeting as the flowers themselves.

Classic Hugo
Fresh mint, elderflower and a little sparkle. Build it in the glass and serve straight away.

Ingredients:

  • 30ml wildbrumby elderflower liqueur schnapps
  • 100ml chilled wildbrumby brut
  • 60ml chilled soda water
  • 6 fresh mint leaves
  • 1–2 lime wheels, to garnish
  • Ice

To Make It:
Gently clap the mint between your hands and place it in a large wine glass. Fill the glass with ice. Pour in the elderflower schnapps, followed by the prosecco and soda water. Stir gently once or twice, add the lime and serve immediately.

Elderflower Sour

Our elderflower serve with Christmas Gin, bright lime and apple, shaken until chilled and topped with a
fine, soft foam.

Ingredients:

  • 45ml wildbrumby Elderflower Schnapps
  • 20ml wildbrumby Christmas Gin (or Classic Gin)
  • 15ml Fresh Lime Juice
  • 20ml Apple Juice
  • 10ml Elderflower Syrup
  • 3 drops Wonderfoam (or 1 egg white)
  • Ice cubes

To Make It:
Chill a coupe or small cocktail glass. Add the Elderflower Schnapps, Christmas Gin, lime juice, apple juice, elderflower syrup and Wonderfoam to a shaker. Shake without ice for about 10 seconds to build the foam. Add ice and shake hard for a further 10–15 seconds, until well chilled. Double strain into the chilled glass. Allow the foam to settle briefly, then serve. A little care with the pour makes all the difference: fine strain to catch the ice shards and leave a smooth finish.

Elderflower Fritters
Makes 10–12 fritters | Prep 15 minutes | Cook 15 minutes

A simple way to enjoy fresh elderflowers in season. Serve these warm, with a light dusting of icing sugar
and a squeeze of lemon.

Ingredients:

  • 10–12 fresh, correctly identified edible elderflower heads, with stalks attached
  • 100 g plain flour
  • 20 g cornflour
  • 1 tbsp caster sugar
  • A pinch of salt
  • 1 egg
  • 150 ml ice-cold sparkling water
  • Neutral oil, for frying
  • Icing sugar and lemon wedges, to serve

To Make It:

  1. Shake the flower heads gently to remove insects. Trim away leaves and excess stem, leaving a short stalk
to hold. If rinsing is needed, dry the flowers thoroughly.
  2. Mix the flour, cornflour, sugar and salt. Whisk the egg and sparkling water together, then stir into the dry
    ingredients just until combined.
  3. Heat 3–4 cm of oil in a deep, heavy saucepan to 175–180°C. Keep the pan no more than half full.
  4. Holding each head by its stalk, dip the flowers into the batter and let the excess drip off. Lower carefully
into the oil, flowers first. Fry in small batches for 1–2 minutes per side, until crisp and lightly golden.
  5. Drain on kitchen paper. Snip off the main stalks before serving, dust with icing sugar and add lemon
    wedges.
Use only positively identified edible elderflowers from an unsprayed source. Remove leaves and avoid
eating the stalks. These fritters use fresh flowers rather than schnapps.

Elderflower and Strawberry Trifle
Serves 6 | Prep 25 minutes | Cook 8 minutes | Chill at least 2 hours

Strawberry compote, soft sponge and whipped mascarpone cream, layered in stemless wine glasses. Easy
to prepare ahead and lovely to bring to the table.

Ingredients:

  • 500 g strawberries, hulled and chopped, plus a few extra to finish
  • 40 g caster sugar
  • 1 tbsp lime juice and lime peel
  • 250 g plain sponge cake, cut into small cubes
  • 60 ml wildbrumby Elderflower Schnapps
  • 30 ml apple juice
  • 250 g mascarpone, chilled
  • 300 ml thickened cream, chilled
  • 25 g icing sugar

To Make It:

  1. Put the strawberries, caster sugar and lime juice in a bowl and let it sit for 6–8 minutes, stirring
    occasionally
  2. Mix the Elderflower Schnapps with the apple juice. Whisk the mascarpone, cream, icing sugar and lime
peel together just until soft peaks form. Stop before the cream becomes stiff or grainy.
  3. Divide half the sponge between six stemless wine glasses. Spoon over half the schnapps mixture, then
add half the compote and half the mascarpone cream.
  4. Repeat the layers. Cover and refrigerate for at least 2 hours, or overnight. Finish with extra fresh
    strawberries just before serving.
Keep chilled until serving. The schnapps is added without cooking, so this dessert contains alcohol.
