Who said Valentine’s Day had to be loud, pink, and tacky? At Wildbrumby, we prefer subtle elegance, authenticity, and a little understated romance. This year, we’re celebrating love with two spirits that practically whisper “I love you”: Peach Nectar Schnapps and Apricot Schnapps.

Both start the same way — with real fruit (one with fuzzy skin), grown by people we know, in places we trust. From there, they take very different paths. Together, they tell a distinctly Alpine Valentine’s story. Read on for tasting notes, cocktail inspiration, and one very good reason to make it all the way to the end.

Peach Nectar Schnapps — Liquid Gold

Our Peach Nectar Schnapps is the most awarded schnapps we make, and it’s earned that title quietly, one sip at a time. Made using ripe peaches sourced from Batlow, it captures peak summer in a glass — juicy, fragrant, and unmistakably peach.

This is not a shy schnapps. She’s a bit of a party girl: intensely fruit-forward, vibrant, and full of life, with a clean sweetness that feels natural rather than sugary. If there were such a thing as celebration in a glass, this would be it.

The perfect base for Valentine’s cocktails, Peach Schnapps is playful, generous, and dangerously easy to love. From sparkling aperitifs to long, refreshing drinks, it brings softness and warmth without ever stealing the spotlight.


Apricot Schnapps — Elegance with Depth

If Peach is all twirling and applause, Apricot Schnapps is her more intriguing counterpart. Made with apricots from Shepparton, it leans drier and more structured, with a natural tartness that keeps everything beautifully balanced.

Subtle notes of almond and marzipan emerge naturally from the fruit, lending this schnapps its classic European character. It’s refined, aromatic, and quietly complex — the kind of spirit that doesn’t need to raise its voice to be heard.

A simple, elegant Valentine’s classic.

Ingredients:
25 ml Wildbrumby Peach Nectar Schnapps
Wildbrumby Brut
30 ml peach purée or a slice or fresh peach

Method:

Pour 20 ml Wildbrumby Peach Nectar Schnapps into a chilled champagne flute. Top gently with Wildbrumby Brut Sparkling. Garnish with a fresh slice of peach and serve immediately — no stirring, no fuss.

Ingredients:
45 ml Wildbrumby Peach Nectar Schnapps

Method:

Fill a glass with ice. Add 45 ml Wildbrumby Peach Nectar Schnapps. Top with freshly pressed orange juice and stir lightly. Sunshine in a glass.

Silky, flirtatious, and just a little bit show-offy.

This one’s for those who like their cocktails soft, elegant, and quietly impressive. Peach Perfect is all about texture and balance — ripe peach, gentle citrus, and a cloud-like finish that feels indulgent without being heavy. Think candlelight, not disco ball.

Ingredients:
45 ml Wildbrumby Peach Nectar Schnapps
30 ml Rubus Patch Gin
30 ml peach purée
15 ml fresh lemon juice
Chickpea juice (aquafaba) or vegan Wonderfoam cocktail foamer

Method:

  1. Fill a cocktail shaker with ice.
  2. Add all ingredients and shake vigorously for around 30 seconds — this is where the magic happens, so don’t be shy.
  3. Strain into a chilled coupe glass and serve immediately.

Elegant, peach-forward, and perfectly at home on a Valentine’s table.

Ingredients:
30 ml Wildbrumby Peach Nectar Schnapps

120–150 ml cold-brew black tea

Serve over ice and garnish with fresh peach and mint. This one also loves a crowd — it’s perfect for batching if you’re hosting.

Ingredients:
30 ml Wildbrumby Classic Gin
30 ml Kosciuszko Vodka

Shake with ice. Strain into a chilled cocktail glass and garnish with an orange twist. Elegant, assertive, and very Alpine.

Austrian Apricot Dumplings (Marillenknödel)

Want to go the extra mile and expand your culinary repertoire? No Valentine’s celebration at Wildbrumby would be complete without dessert — and while our strudel is famously hard to beat, we’d like to introduce another traditional Austrian favourite you can recreate at home.

Few dishes feel as nostalgic, indulgent, and unmistakably Alpine as Austrian Apricot Dumplings. Marillenknödel are a true classic: whole apricots wrapped in soft dough, gently cooked until pillowy, then rolled in buttery, golden breadcrumbs and finished with a snowfall of icing sugar. Served warm, they’re comforting, generous, and made for sharing.

Recipe: Austrian Apricot Dumplings (Serves 4)

Ingredients:

For the dumplings:
8 fresh apricots
8 sugar cubes
250 g quark or ricotta (cream cheese works in a pinch)
1 egg
170 g plain flour
70 g butter, softened
A pinch of salt

For the crumb coating:
80 g butter
140 g breadcrumbs
2 tablespoons sugar
A pinch of cinnamon

To serve:
Icing sugar

Method:

  1. Wash the apricots and carefully halve them, removing the stones while keeping the fruit intact. Place a sugar cube inside each apricot and gently close them back up.
  2. In a bowl, combine the egg and butter and whip until fluffy. Add the quark (or ricotta), flour, and salt, mixing just until a soft dough forms. Be gentle — overworking the dough will make the dumplings heavy.
  3. Divide the dough into eight portions, flatten each in your hand, and wrap it around an apricot, sealing completely. Roll gently into smooth balls.
  4. Bring a large pot of lightly salted water to a gentle simmer. Add the dumplings and cook for 10–12 minutes, until they float to the surface.
  5. While they cook, melt the butter in a pan and add the breadcrumbs and sugar. Toast gently, stirring often, until golden and fragrant.
  6. Remove the dumplings from the water, drain briefly, then roll them in the buttery crumbs until fully coated.
  7. Serve warm, dusted with icing sugar, and accompanied by a small glass of Wildbrumby Apricot Schnapps — or a discreet drizzle over the plate if you’re feeling indulgent.

Mango Madness
Product: Mango schnapps and Kosciuszko Vodka


Ingredients:
30mL mango schnapps
30mL Kosciuszko Vodka
15mL fresh lime juice
15mL mango juice and mango purée
Top up with ginger beer

Method:
Pour your schnapps, lime juice, mango juice, mango puree and vodka into an ice-filled shaker and shake vigorously for 30seconds. Pour into an ice-filled glass, then top up with Ginger Beer. Garnish with a slice of orange. Sip, relax your shoulds, and give a long sigh of contentment.




Fuzzy Navel
Products: Peach Nectar schnapps and orange juice


Ingredients:
45mL Peach Nectar schnapps
55mL orange juice

Method:
Fill a glass with ice. Pour in the peach schnapps and top up with freshly pressed orange juice to your liking. Garnish with a slice of orange, give it a gentle stir, and enjoy.

Italian Lemonade
Products: Limoncello and Wildbrumby Classic Gin


Ingredients:
45mL Wildbrumby Limoncello
30mL Classic Gin
20mL fresh lemon juice
Top up with Indian tonic

Method:
Fill a large wine glass with ice. Add schnapps, gin and lemon juice, then stir gently. Top up with Indian Tonic water and garnish with a slice of lemon and a sprig of fresh rosemary. Chillax.




Donner and Blitz
Products: Devil’s Tongue schnapps


Ingredients:
30mL Wildbrumby Devil’s Tongue
Ginger beer
Sprig of mint to garnish

Method:
Pour Wildbrumby Devil’s Tongue schnapps into a tall, ice-filled glass. Top with ginger ale and garnish with a sprig of mint.

Ingredients:

Method:

Method:

Method:
Add all your ingredients into a cocktail shaker over ice and shake until the outside is frosted. Double strain into an ice-filled tumbler and garnish with a cherry.
PS. If your jam jar is almost empty, shake your drink in the jar to save washing up.

We know, we know… when most people think of a spritz, they picture an Aperol by a Venetian canal or a Limoncello on the Amalfi Coast. But did you know the word spritz actually comes from the German for “splash”? It was Austrian travellers who first lightened Italian wine with a dash of soda. Incidentally, the Austrians are also instrumental in the founding of Wildbrumby schnapps…See, where we’re going here?

So, if the spritz isn’t purely an Italian invention, but was inspired by Austrians, we reckon us Aussies deserve a turn to give it a little Wildbrumby schnappy twist of our own.

Oktoberfest, the Wildbrumby Way

On Saturday 4th October 2025, we are celebrating over a decade of Oktoberfests held at Wildbrumby Distillery! We asked Chris Wall from the Cooma District Band, how the band came to be involved with the annual Oktoberfest, and why it’s a great day out for the whole family.

How did the Cooma District Band become involved with Oktoberfest at Wildbrumby?

About 15 or 20 years ago I would think it was, we found a book, “Alles Stimmung”, in the band’s music stores, with 10 well known Bavarian style songs and tunes. At the time we had a few German speakers in the band, and so we gathered a bit more music, and put on an Oktoberfest…I think it was at the Air Rifle club in Cooma, which had a German background. We asked Monika and Brad (the founders of Wildbrumby) if they were interested, and we have been a fixture on the October long weekend ever since, and we love it.

What kind of music do you play?

I think it was thanks to Monika we became “The Wildbrumby Oombahbah Band”. Over the last 20 years we have gathered more and more German/Austrian/Oompah style music. When we found out Monika grew up in Kufstein, and we had “Kufsteinlieder” in our music, we really had to add that to the list. I believe it has words about how beautiful the town is, and it is a lovely lyrical waltz. There are some common themes (in the list): “If the water in the Rhine was Golden Wine”, “You can’t be true to me”… largely related to drinking and what can happen after drinking!

But you don’t have to drink like the composers of those songs to enjoy a day at Wildbrumby. One of the great things is that we so often have an enthusiastic audience, but it is never rowdy nor unpleasant as you can get at other venues. It is always a great family day with Oompah music, dancing, singing, kids running about, and great schnapps, beer and food.

Are there games for the kids?

We usually bring some toy horses and have a mad kids’ “gallop” that gets faster and faster. There are always percussion instruments to play, and we find the under 7’s are often the most enthusiastic. This year our bass drummer is away, so there is an opportunity for someone to play along with the band. Sometimes we have kids who play an instrument sit in and follow the music while mum and dad relax on the grass and have a schnapps or something from the Wildbrumby “Hoffbrauhaus”.

And, of course, there is always a “Chicken Dance” for young and old, waltzes, polkas, and a “Schuplattler” – a bit of group thigh slapping, best done with a Tyrolean hat.

We plan a bit of a sing along…Edelweiss, and some songs in German…and just doing your best with the pronunciation is fine!

The event details:

Dress up and come along. As one of our songs translates: “I’d rather wear a Tyrolean Hat”. We are outside, and people are coming and going as they please.

And it’s all free, put on by Wildbrumby.

The band will play from 11:30 to 4:30 on Sat 4 October, so come along and enjoy (and pray for good weather).

Though not an uncommon occurrence if you’re hitting the slopes this winter, the Faceplant we have in mind is far more satisfying. Featuring our seasonal Baked Apple schnapps and a dollop of whipped cream, this recipe is wildbrumby approved to try at home.

Ingredients: 

25mL wildbrumby baked apple schnapps
whipped cream
cinnamon

How to make it: 

  1. Warm your wildbrumby baked apple schnapps in the microwave for 10-15 seconds in a shot glass.
  2. Top with whipped cream and a light dusting of cinnamon.

Powder Day

Every snow enthusiast’s dream, in Australia, true powder days often prove elusive. Here’s one Powder Day that will consistently put a smile on your dial.

30 ml Kosciuszko vodka
30 ml apple juice
25 ml cream

How to make it: 

  1. Add all ingredients to an ice filled cocktail shaker and shake till cold.

Thredbo’s Saturday night staff flare runs are legendary! Whilst you may not be able to be part of the action on the mountain, you can certainly re-create the excitement at home with this spicy delight.

Ingredients:
30 ml wildbrumby Devil’s Tongue schnapps
30 ml wildbrumby Classic Gin
60 ml cranberry juice
Dash of Angostura bitters


How to make it: 

  1. Combine ingredients in a chilled glass, fill with ice and stir for 10 seconds.
  2. Strain into a chilled glass.
  3. Serve with dark chocolate nibbles if desired.

At its simplest, it’s a mix of gin and vermouth, garnished with an olive or lemon twist.

A real martini is a mixer-free zone with no added sugar, juice or Monin syrups, which means your spirits need to be top shelf. We’re talking a high-quality gin or vodka (such as those crafted by yours truly), and dry vermouth (though some recipes flirt with sweet vermouth). A couple of dashes of bitters and your garnish of choice seal the deal.

How to master a classic martini

Ask 100 martini lovers how to make one, and you’ll get 100 different answers—dry, wet, dirty, shaken, stirred, twisted, or straight up.

We’re keeping things simple with the go-to method we’ve perfected at the wildbrumby distillery:

  1. Chill everything—your martini glass, your mixing glass, and your ingredients. Cold is king.

  2. Fill your mixing glass with ice (the chunkier the better), and drain off any water.

  3. Add 6 parts Wildbrumby Classic Gin or Kosciuszko Vodka, 1 part dry vermouth, and a couple of dashes of bitters (we’re big fans of orange bitters).

  4. Stir for 15 turns to get it nice and icy. This also lets just the right amount of water from the ice sneak in.

  5. Strain into your chilled martini glass and finish with your garnish—either a green olive or a twist of organic lemon.

Now sit back, sip slowly, and enjoy within 15–20 minutes while it’s still ice cold and fabulous.

Fancy a little mixology mayhem?

If you’re the kind who likes to tweak things and experiment—go for it! Just keep a few golden rules in mind:

  • Not all gin is created equal.
    The martini is no place for flavoured or fruity gins. Stick with a London Dry style (such as Wildbrumby’s Classic Gin) that leads with juniper and spice. Pink gin? Sloe gin? Save those for a picnic.

  • Vodka’s welcome too.
    If gin’s not your thing, vodka makes a fine (if slightly less botanical) substitute. But again, quality matters. The house vodka at your local pub won’t cut it. You want a premium vodka with no burn. Such as Kosciuszko Vodka.

  • Vermouth is your wingman, not your enemy.
    You want something dry and subtle—there’s a growing range of excellent white vermouths available in Australia. Some folks rinse the glass with vermouth and chuck the rest—but why waste it? Just use a splash. Respect the craft.

  • Bitters matter.
    A dash or two adds complexity without overpowering. Orange bitters are our go-to, but Angostura will also do nicely.

  • Garnish wisely.
    A green olive (unfilled, in brine) is a timeless choice. Not a fan? Try a twist of lemon or orange zest, or get creative with a sprig of rosemary or thyme. A Gibson martini even calls for a cocktail onion—so don’t be afraid to experiment.

Shaken, not stirred?

Thanks, Mr Bond—but you’ve confused everyone.

His signature Vesper martini (3 parts gin, 1 part vodka, ½ part Kina Lillet) makes a case for shaking, especially when you’re blending different spirits. But most martinis? They’re better stirred. It keeps things silky, cold, and classy.

Dry, wet or dirty?

  • A dry martini has less vermouth.

  • A wet martini has more.

  • A dirty martini gets a splash of olive brine for an extra savoury kick (we sometimes infuse ours with spent botanicals for more wildbrumby flair).

The drink’s origins are suitably cheeky. The story goes that a now-famous London bartender created it after a model walked into the bar and asked for something that would “wake me up, and then mess me up.”

So, how do you mix one?


Wildbrumby Espresso Martini

Ingredients:
– 45ml Wildbrumby Coffee Liqueur Schnapps
– 30ml Kosciuszko Vodka
– 30ml Fresh Espresso (double shot, ideally)
– Ice
– Coffee beans (for garnish)


Method:
Add all ingredients to a cocktail shaker filled with ice.
Shake well—think alpine breeze in a snowstorm—until the shaker feels icy cold.
Double strain into a chilled martini glass and garnish with three coffee beans (a traditional nod to health, wealth and happiness).
Sip immediately while the crema is still fresh and frothy on top.

Café au Schnapps
Think brunch. But bolder.
This is the morning-after version of the espresso martini—lighter, creamier, and a bit decadent.


Ingredients:
– 45ml Coffee Liqueur Schnapps
– 30ml Fresh cream
– 15ml Kosciuszko Vodka
– Dash of vanilla extract
– Ice


Method:
Add all ingredients to a shaker with plenty of ice. Shake until silky, then strain into a small coupe glass or tumbler. Garnish with grated dark chocolate or a dusting of cinnamon.

Mocha Mountain Martini
A touch of chocolate, a hint of spice, and a bold coffee finish.
Perfect for fireside sipping after a long day on the slopes.


Ingredients:
– 40ml Coffee Liqueur Schnapps
– 20ml Kosciuszko Vodka
– 10ml Chocolate liqueur
– Dash of Devil’s Tongue schnapps or a pinch of cayenne (optional)


Method:
Shake all ingredients with ice until well chilled, then strain into a chilled martini glass. Garnish with a thin slice of dried orange or a dusting of cocoa powder.


A Few Final Tips from the Distiller’s Bench

Method:

Fill a glass with ice, add the schnapps and gin, then top with Fever Tree Raspberry Tonic. Stir gently and garnish with fresh berries.

 

For a variation on the Alpine Berry Tonic, swap the Raspberry for an Elderflower Tonic.

Peary Cinnamon Sparkler

This cocktail combines Wildbrumby’s Pear William Schnapps with fresh strawberries and a dash of cinnamon for a spicy twist.

Ingredients:
40ml Pear William Schnapps
4 Fresh strawberries
A pinch of cinnamon
10ml honey (or simple syrup)
Soda water
Ice
Strawberry to garnish

Method:
Muddle strawberries in the bottom of a shaker. Add the Pear William schnapps, honey syrup and cinnamon. Fill with ice and shake until well mixed. Strain into a glass filled with ice and top with soda water. Garnish with a fresh strawberry (cut into a heart-shape for extra cute factor).


Pink Lady’s Kiss

A stunningly simple yet stunning cocktail with a lovely pink hue. It combines the crispness of Wildbrumby Pink Lady Apple Schnapps with a hint of floral notes from elderflower tonic.

Ingredients:
30ml Pink Lady Apple Schnapps
30ml Rubus Patch Gin
20ml Fever-Tree elderflower tonic
15ml Honey
15ml fresh lime juice
Apple blossom and wedge of lime

Method:
Fill a shaker with ice and add Wildbrumby Pink Lady Apple Schnapps, elderflower liqueur, and lime juice. Shake until well chilled. Strain into a chilled tumbler. Garnish with a wedge of lime and an apple blossom.

Lady in Pink


This Lady in Pink does take a little more work than your average homemade cocktail. They say that the finest apples are at the top of the tree. Similarly, to make the finest Pink Lady Apple schnapps cocktail, though you don’t have to pick the apples yourself (because we’ve done that part) you have to put in a bit of extra effort. It’s worth it.

Ingredients:
30ml Pink Lady Apple Schnapps
30ml Rubus Patch Gin
30ml Rhubarb and Rose Syrup*
One egg white
Dusting of cinnamon

Pro Tip: For a vegan friendly alternative to egg white, use Wonderfoam Cocktail Foamer. Purchase online from Only Bitters here.

Method:
Add Pink Lady Apple Schnapps, Rubus Patch Gin, one egg white, and Rhubarb Syrup to an ice-filled cocktail shaker (see instructions below for making Rhubarb and Rose Syrup).

Once shaken, strain contents into a martini glass and dust with cinnamon. Drink to your heart’s content.

*Ingredients for Rhubarb and Rose Syrup:
• 2 cups rhubarb, chopped
• 1 cup sugar
• 1 cup water
• 1-2 tbsp dried rose petals (or 1-2 tbsp rose water)
• 1 tbsp lime juice

Instructions:

Let the syrup cool, then transfer it to a bottle or jar. Store in the fridge for up to 2 weeks.

In a saucepan, combine rhubarb, sugar, and water. Bring to a simmer over medium heat.

Cook for about 15-20 minutes, stirring occasionally, until the rhubarb breaks down and the liquid thickens.

Add the rose petals (or rose water) and lemon juice. Stir well and simmer for another 5 minutes.

Remove from heat and strain the mixture through a fine mesh sieve to remove solids.

Lady in Pink

Rubus, Limoncello & Tonic 


This cocktail is pink, pretty and a little bit tart.

Our rubus patch gin is made using organic raspberries picked straight from our distillery gardens and makes a brilliant G&T combo with our wildbrumby limoncello. And it looks delectable too!

Ingredients:
20mL wildbrumby limoncello
30mL wildbrumby rubus patch gin
tonic
lemon
raspberries

Method:
Firstly, pack a wide, stemless glass to the brim with lemon wheels, whole raspberries and ice. Pour our rubus patch gin and wildbrumby limoncello into your glass and top with tonic water. We suggest fever tree’s refreshingly light tonic water. 

Serve your Rubus, Limoncello & Tonic with a vibrant paper straw and an extravagant cheese platter.

Bellini

If you’re a fan of our peach nectar schnapps you’re probably familiar with our twist on the perfect bellini cocktail. It’s a two-step, wildbrumby classic. The name ‘Bellini’ feels like an obvious choice for a heavenly cocktail.

In recent years the peach nectar or puree has been swapped out for quality peach schnapps. And whilst the Bellini has lost its notable pink hue, it has only improved in taste!

Hot tip: Swap out Peach Schnapps for Pink Lady Apple schnapps and garnish with an apple slice.

Ingredients:
20mL wildbrumby peach schnapps (or pink lady apple schnapps)
130mL of wildbrumby Brut
One peach (preferably a white peach)

Method:
Take a fresh peach and slice out a thin wedge, keeping the skin on. Garnish your chilled champagne flute with the peach slice then add wildbrumby Peach Schnapps. Angle the champagne flute on a 45-degree angle and slowly fill the glass with wildbrumby Brut.

Make sure to keep the lip of your wildbrumby Brut bottle close to the champagne flute and straighten the glass as it fills. This will help control bubbles and the brut and schnapps will mix evenly. Ta da! Your bubbly peach treat is ready to be served.

Strawberry Sting

Chilli and strawberry are the surprising pair that you won’t be able to get enough of! Especially on a warm, summery Valentine’s Day…

Ingredients:

30mL wildbrumby devil’s tongue
30mL strawberry syrup
soda water
punnet of strawberries

How to make it:

To make your strawberry simple syrup, quarter 5 strawberries before mashing in a small pot.

Add 100g white sugar and 120mL water to the pot. Bring to a simmer and stir till the sugar has dissolved before taking it off the heat. Once the mixture has cooled and taken on a reddish-pink colour, strain the contents into a small jug.

Now that you have your strawberry syrup – it’s go time! Pour wildbrumby devil’s tongue schnapps and your strawberry syrup into an ice filled glass. Top with soda water and garnish with halved strawberries.
