Four fantastic raspberry cocktails


It’s raspberry season and that means two things. Picnics with friends in the autumn sun and blushing pink glasses filled with schnappy, raspberry cocktails.

Our seasonal wildbrumby raspberry schnapps is sweet, tart and a little bit sassy. This vibrant berry has a knack for bringing excitement to any drink. Which is why we keep an organically grown raspberry patch mere steps from our distillery door.

Each raspberry from our patch is plucked by hand in their prime from a ripe maroon harvest and turned into one of two things: our famous rubus patch gin, or — our scrumptious wildbrumby raspberry schnapps!

Filled to the brim with juicy raspberries, this schnapps is perfect to sip on straight alongside a chocolate rich dessert or a selection of flavourful cheeses.

But, if we caught your attention at ‘blushing pink glasses filled with schnappy, raspberry cocktails’, we’ve got you covered. Here are four raspberry crazed cocktails you’ll want to try out and share with friends — or maybe just keep for yourself.

Raspberry Collins

Our Raspberry Collins recipe is a velvety, bubbly treat that boasts notes of vibrant berry and tart lemon. This is your no-fuss cocktail addition to an afternoon of friends and fruit forward cheese platters.


30mL wildbrumby raspberry schnapps
15mL lemon juice
15mL simple (sugar) syrup
soda water

Add our wildbrumby raspberry schnapps, lemon juice and simple syrup into an ice-filled bar shaker. Shake thoroughly till the outside of your bar shaker is evenly frosted. Strain over ice into a highball glass and top with soda water.


No bar shaker at home? Here’s an alternative recipe:

Fill a tall glass to the brim with ice. Then, add 45mL of our wildbrumby raspberry schnapps, 15mL lemon juice and top with soda water.

Voila! You have a refreshing and Instagram-worthy drink in hand — thanks to the blushing hue of our raspberry schnapps.

But even a photogenic drink looks better with a twist of lemon. To put this garnish together you’ll need one lemon and a vegetable peeler. Begin by creating a large peel over the equator of the lemon.

Make the job easier by placing a finger on the start of your peel and continue till your peel stretches halfway around your lemon. Softly pinch the peel lengthways over your glass, yellow side out.

This will cover your drink with a zesty burst of lemon and be an aromatic compliment to those sweet raspberry notes. For an eye-catching pop of colour, twist the peel and place across the top of your glass.

Clover Club

Elegant, foamy and oh so tasty. The Clover Club has long been a drink associated with decadence and showmanship. Both our raspberry forward rubus patch gin and raspberry schnapps come together to create the ultimate pink drink.

Watch as this freshly shaken drink turns from a cloud of white to an exuberant pink in your glass!

If you’ve got a flashy Easter event planned this is the drink your guests will be talking about for days after.

Add all ingredients to an ice filled bar shaker. Shake thoroughly and strain into a chilled martini coup. Garnish with three raspberries on a cocktail pick or put your new lemon twist skills to good use.

Razzamatazz Gin Fizz

If you’re here for pink bubbly sips enjoyed whilst dancing in the afternoon sun — look no further! This picnic party drink is aptly named the razzmatazz gin fizz for its glitzy raspberry notes and a tart grapefruit bite.

30mL wildbrumby raspberry schnapps
30mL wildbrumby classic gin
30mL grapefruit juice
soda water

Begin by filling a bar shaker with ice before adding all ingredients excluding the soda water. Shake thoroughly till the outside of your bar shaker is evenly frosted. Strain over ice into a highball glass and top with soda water.

Garnish with a half wheel of grapefruit and two fresh raspberries.


Madame Rouge

One sip of this boozy, raspberry milkshake and you’ll be wanting to serve it with a side of fresh scones.

The Madam Rouge is also a perfect dessert cocktail. So, leave the ice-cream in the fridge, pick up your bar shaker and show off your cocktail making skills!

2 teaspoons raspberry jam


Add all ingredients to your ice-filled bar shaker. Shake till thoroughly chilled and strain over ice into a martini glass. Garnish with two fresh raspberries.

Four devilish cocktails to warm your soul


Sweet and sinful with just the right amount of sting – our wildbrumby devil’s tongue schnapps is the brilliant combination of habanero chili and pink lady apples.

This schnapps has converted chilli rejecters, and inspired new flavour possibilities in the minds of life-long chilli lovers.

On days where all four seasons want to make an appearance, chilli would have to be the perfect ingredient to play with in cocktails. It’s soul warming against a cool breeze, and vibrantly zing-y under a glowing sun. You can enjoy these cocktails hot or iced – and to top it off, the flavour combinations are almost endless.

Strawberry Sting

Chilli and strawberry are the surprising pair that you won’t be able to get enough of! Especially when summer wants to say ‘hello’ in late autumn – or when friends spontaneously pop around with a devilish cheese platter.


30mL wildbrumby devil’s tongue
30mL strawberry syrup
soda water
punnet of strawberries

How to make it:

To make your strawberry simple syrup, quarter 5 strawberries before mashing in a small pot.


Add 100g white sugar and 120mL water to the pot. Bring to a simmer and stir till the sugar has dissolved before taking it off the heat. Once the mixture has cooled and taken on a reddish-pink colour, strain the contents into a small jug.

Now that you have your strawberry syrup – it’s go time! Pour wildbrumby devil’s tongue schnapps and your strawberry syrup into an ice filled glass. Top with soda water and garnish with halved strawberries.

Donner & Blitz

Long-time fans of our wildbrumby devil’s tongue will flaunt this cocktail as one of their favourite ways to drink the spicy-sweet schnapps – and with one sip you can see why.

The Donner & Blitz cocktail, meaning thunder and lightning in German, has all the punch of habanero chilli backed up by a ginger ale zing. Better still, it’s easy to make!

How to make it:

Simply pour our wildbrumby devil’s tongue schnapps into a tall, ice filled glass. Top with ginger ale and garnish with a sprig of mint.

If you’re a die-hard chilli lover and looking for a bit more heat, try this recipe with 60mL wildbrumby devil’s tongue.

Dreamy Devil

This is a classy martini-style cocktail that can be enjoyed any time of the year – and there are endless variations at your fingertips if you like to play around with ingredients. But if you are a lover of chilli and chocolate, then this is most certainly the devilish treat for you.


30mL wildbrumby devil’s tongue
30mL chocolate simple syrup
30mL thickened cream
20mL kosciuszko vodka
dark chocolate to garnish

How to make it:

Making your chocolate simple syrup is easier than you might think.


In a small, pourable cup add 60mL of hot water from the kettle to 2 tablespoons of dark chocolate drinking powder. Stir till your mixture is free from chocolate clumps before adding 50g of white sugar. Continue to stir until the sugar has dissolved and allow the mixture to cool.

Once you have your chocolate simple syrup ready to go, combine all ingredients in an ice filled bar shaker. Shake thoroughly and serve in a chilled martini coup. Garnish with dark chocolate shavings.

Chilli Hot Chocolate

How to make it:

We love serving this cold weather treat to our distillery guests – it’s a true soul warmer. Whilst we’re not going to share all our secrets, here is how you can make your version of our chilli hot chocolate at home.

Make yourself a piping-hot mug of hot chocolate using your favourite method. Just before serving add 30mL of our wildbrumby devil’s tongue schnapps to your mug. Don’t forget the marshmallows.


Apple schnapps is a bitter-sweet delight


Apples have been used in the creation of schnapps ever since our European ancestors first came up with this wonderful, warming mountain drink, and we can confirm they make a heavenly schnapps!

Here in Australia, we are lucky to have orchards growing some of the best apples on earth – from the sweet delight of pink varieties to the sour bite of the Granny Smith.

Our pink lady apple schnapps is akin to biting into a freshly picked apple, and for many she’s the go-to option for schnapps on the rocks. But she’s also an incredibly versatile cocktail ingredient

And our sour apple schnapps? This cult classic is made with green apples and pickled lemon to ramp up those deliciously tart elements. You’ll find this lip-smacking liquid in our Sour Apple Martini, plus a few other apple-inspired, cocktail ideas below like our Sour Mojito, so read on for ideas on how to create your own schnappy taste sensation.

The Sweetest Sour

‘Sour’ isn’t our first thought when we think of our pink lady apple schnapps. But this cocktail is the perfect balance of sweet apple and citrus – so we just had to include it! Plus, we can’t get enough of that silky-sweet texture.

Whip out this recipe when you want to show off your cocktail skills to friends. Or any time you want to sit back and enjoy a great sunset with a cheese platter all to yourself.


60mL wildbrumby pink lady apple schnapps
15mL aquafaba (chickpea juice)
20mL freshly squeezed lemon juice
pink lady apple


Cut up a wedge of any sweet pink apple into cubes and add to a bar shaker with lemon juice. Muddle your apple pieces till slightly squished. Add ice and all other ingredients, before shaking thoroughly. Strain into a tumbler glass over large ice cubes, and garnish with a fan of apple slices.

Sour Apple Mojito 

Refreshing, sweet and a little bit tart. This combination of our sour apple schnapps and classic gin brings a beautiful floral element to the drink. You’ll never want to make a mojito any other way again! 

It’s also a great recipe to batch and serve at parties or an afternoon barbecue. Simply multiply your ingredients by six and build the drink in a pitcher. Now all your friends have to do is pour.

Muddle two lime wedges and four mint leaves in a tall glass before adding our sour apple schnapps and classic gin. Fill the glass with ice and place one thinly sliced half-moon of apple and a sprig of mint down the inside of the glass. Top with ginger ale. 

Lady Bellini

You’ve likely heard of the classic Bellini. Now let us introduce the Lady Bellini! This extravagant riff on a classic celebratory cocktail is perfect for special occasions and big announcements.

And honestly – What’s better than sweet apple and bubbly?

Sour Apple Martini

Our biggest fans are all about this subtle, sweet and sour martini. It’s perfect for a romantic dinner for two, a classy picnic with friends or to accompany a cracking cheese board. 

And the great news is it’s simple to make – you just need the right ingredients. 


60ml Sour Apple Schnapps
30ml Kosciusko Vodka
Lemon twist


Add all your schnapps and vodka to an ice-filled mixing glass and stir for 15 rotations. Strain into a chilled Martini glass and garnish with a twist of organic lemon. Double the ingredients to create a romantic cocktail experience for two.

Wildbrumby named ‘business of the year’


Brad and Monika Spalding are proud to have been named ‘Business of the Year’ at the Jindabyne Citizen Award Ceremony on Australia Day 2022.

The Australia Day awards were held at John Connors Oval to celebrate the achievements of local citizens and businesses, and wildbrumby distillery was chosen for its outstanding contribution to tourism and arts in the Snowy Monaro region.

The event was supported by Snowy Monaro Regional Council and The National Australia Day Council as part of the National Australia Day Celebrations.

Mangoes are the summertime fruit that can be enjoyed any time of the day.

Pour wildbrumby mango schnapps into a champagne flute. Angling the flute on a 45-degree angle to allow mixing, fill to the halfway mark with wildbrumby brut. Top with freshly squeezed orange juice and garnish with a slice of mango.

Mango, meet your new best friend!

Our wildbrumby classic gin is a citrus-forward, mountain pepper berry kissed spirit — a perfect accompaniment to the refreshing notes of our wildbrumby mango schnapps. Save this bubbly treat for a day of poolside relaxation. Or serve it at your next dinner party – your friends will think you hired a professional bartender.

40mL wildbrumby mango schnapps
20mL wildbrumby classic gin
15mL fresh lemon juice
soda water
(Blend in a splash of pureed mango for an even fruitier cocktail!)

Place ice, wildbrumby mango schnapps, wildbrumby classic gin and lemon juice in a bar shaker and shake thoroughly. You’ll be able to tell it’s ready when frost forms on the outside of your bar shaker tin.

Strain contents into a highball glass over ice and top with soda water.

No bar shaker at home? Simply build your drink directly into your highball glass with ice and stir thoroughly before topping with soda water.

Garnish with a cocktail skewer of mango cubes and a sprig of mint.

Mango on Mango Sorbet

It can’t get much better than sorbet on a warm summer night. Right? Unless that sorbet has wildbrumby schnapps in it – and you bet ours does!

This sorbet recipe is mango, mango, mango. And it’s so simple to make.

All you need is a blender, plenty of our wildbrumby mango schnapps (available here*) and a good excuse to show off your sorbet making skills to your friends.

Serves 2

100mL wildbrumby mango schnapps
2 fresh mangoes
lime juice

Skin and pit your mangoes before blitzing them in a blender. Incorporate our wildbrumby mango schnapps and a squeeze of lime juice with the mangoes. Blitz again till contents are smooth.
Pour the mixture into ice cubes and freeze for at least 5 hours. Transfer sorbet cubes into a wide wine glass when ready.

Garnish with a slice of mango and serve with a spoon. For a boozier treat, top with 20mL of our wildbrumby mango schnapps – Delish!

Ring in Christmas with sour cherry cocktails


Bring out the champagne glasses – it’s sour cherry schnapps season!

Christmas is all about great company and fabulous food. Lunch tables overflow with prawns and sweet, heart-shaped cherries. Their pits decorating the table come dinner time.

So, what happens to their smaller, less common cousins – the sour, morello cherry?

These deep ruby morsels are gifted with a complex flavour that we believe was made for our sour cherry schnapps!

Sour cherries, like the morello cherry have been used in liqueurs all over Europe for centuries. The most famous being Kirshwasser, meaning “cherry water”, from the Black Forrest region of Germany.

You guessed it. Sour cherry is the beautifully tart and tempting schnapps responsible for the delicious black forest cake. But could you imagine a cherry topped pavlova drizzled with our seasonal sour cherry schnapps!?

The possibilities are endless with this deliciously bittersweet treat. Here are a few cocktail recipes to get you cheers-ing to cherry this Christmas!

Kirsch Royale

As a Christmassy riff on the French ‘Kir Royale’, this cocktail is all about celebration. The star ingredient? A generous pour of our seasonal sour cherry schnapps.

This is the perfect cocktail to serve to friends just as the Christmas crackers are pulled and the jokes are shared.

How to make it:

To be cheers-ing to cherry all through to Christmas dinner, first place your morello cherry into a champagne flute and add our wildbrumby sour cherry schnapps.

Next, tilt the champagne flute on a 45-degree angle and fill with our wildbrumby brut. This will result in an evenly mixed cocktail that is ready to serve in seconds.


Sour Cherry Martini

It wouldn’t be a wildbrumby celebration without a martini. And our seasonal sour cherry schnapps is the ingredient that takes our signature martini recipe from party favourite to the Christmas cocktail everyone will want to sip.

In this cocktail you’ll find a lip-smacking tartness and candied cherry notes. (Have a friend obsessed with martinis? We have that Sour Cherry Martini Pack they didn’t know was on their Christmas wish list.)


60mL wildbrumby Sour Cherry Schnapps
30mL wildbrumby Kosciuszko Vodka
morello cherry

How to make it:

Set up your chilled martini glass with a single morello cherry. Then, bring out your cocktail mixing glass and fill it to the brim with ice. Add our sour cherry schnapps and wildbrumby Kosciuszko vodka, and stir for 15 rotations.

Strain the contents of your cocktail mixing glass into your chilled martini glass. Enjoy!


Sour Cherry Sling

The Singapore Sling, a brilliantly fruity and pink cocktail, was invented in Singapore in the early 1900’s and has been a summertime classic ever since.

Some versions of the long forgotten ‘original recipe’ call for pineapple juice. However, our version combines the citrus notes of fresh lemon and orange, giving this cherry-forward drink an extra punch of tartness.

Sipping this cocktail by the pool or whilst on BBQ duty is one way to beat that summertime heat.


30mL Classic Gin
30mL Sour Cherry
15mL fresh lemon juice
15mL fresh orange juice
morello cherries
wildbrumby morello bitters (or Angostura bitters)
soda water

How to make it:

The key to making the best Singapore Sling is to use fresh and quality ingredients. First, squeeze at least 15mL of fresh lemon juice and 15mL of fresh orange juice. Then prep your garnish by pinning two morello cherries using a cocktail pin.

Fill a bar shaker with ice and pour in the lemon juice and orange juice, followed by our wildbrumby classic gin and our cherry schnapps. Shake till frost forms on the outside of your bar shaker and strain into an ice filled Collins glass. Top with soda water.

Place your pinned cherries on top of your glass and add a tiny dash of morello bitters (available from our distillery door). And if you don’t have a bar shaker at home, simply build it straight into your glass.

We’ve got all the ingredients to add a dash of magic to your festivities this year.

Fine food and drink are the hallmarks of the silly season, and while we’ve never let a lack of snow get in the way of the great Australian Christmas, traditional mulled beverages just don’t cut it this time of the year.

For most of us, summertime celebrations are spent beside the pool or the barbie where ice-cold beer and cocktails are the stars of the show. 

So whether it’s a sparkling peach bellini, sour cherry martini, or a limited-edition pink gin & tonic that jingles your bells, we’ve got all the ingredients to make yours a magical one.

Here are four of our go-to cocktails for a schnappy, summertime Christmas.

Black Label Christmas Gin

Born through blending vibrant Christmas flavours with our award-winning Rubus Patch Gin, this is a gin you’ll wish someone would gift to you.

Our Black Label Gin has vivacious notes of festive fruits and elderflower paired with homegrown raspberries, juniper, and a trio of citrus. And like all our gins, this one is balanced with pristine alpine water and native botanicals found in our own backyard — the Snowy Mountains.

You can enjoy this lusciously pink gin over ice or with a quality tonic. But the best way to enjoy a festive fruit-forward gin? In a big glass of our Holy Hoity Toity cocktail while you lounge around in a sun-bathed beach chair. Heaven!

Holy Hoity Toity

Like a classic gin and tonic but with a festive twist. Our wildbrumby Black Label Gin is the centrepiece of a cocktail with all the sleigh bells and whistles. Sweet, fruity and paired perfectly with a traditional pavlova – your Christmas party guests will be coming back for seconds.

30mL wildbrumby Black Label Gin
Soda Water and Lemonade (or Elderflower Tonic)

Steep raspberries in wildbrumby Black Label Gin for at least an hour before serving. Prepare garnishes by thinly slicing lemon wheels and cucumber strips.

Add ice, garnishes, soaked raspberries and wildbrumby Black Label Gin to a large wine glass. Top with either elderflower tonic, or soda water and a splash of lemonade. Shop for Black Label Gin here.

Cherry Sour

Nothing says Christmas quite like cherries and this luscious cocktail is no exception. 

Our Cherry Sour strikes the perfect balance between the sweet and sour elements of our seasonal Sour Cherry schnapps with cherry notes from our Christmas gin adding depth to this festive favourite.

60mL wildbrumby Sour Cherry schnapps
30mL wildbrumby Christmas gin 
20mL fresh lime juice
1 teaspoon wildbrumby morello cherry syrup (or make your own syrup from cherry jam)
30mL aquafaba chickpea juice (or 1 fresh egg white if preferred)

Add all ingredients into a cocktail shaker. Shake dry (without ice) for 15 seconds, then add ice and shake until cold.
Double strain into an ice filled tumbler and garnish with morello cherries.

Peach Nectar Bellini

Inspired by 15th Century paintings of pink togas and holy garments – the Bellini is sophisticated in flavour and simple to create here for extravagant celebrations!

It’s been a long 2020 and we’re all itching to ring in a better New Year. So, pop the cork on our wildbrumby Brut and get those bubbles flowing.

Simple, sophisticated, and full of zest! This scrumptious, schnappy take on an old Italian favourite is bursting with lemon and just loves to be paired with something cold and carbonated.

Steeped in the history of Southern Italy, each family would perfect their own unique limoncello recipe to serve up to esteemed guests as a digestif.

Wildbrumby’s own recipe was inspired by a trip to Naples, with perfectly sweet citrus notes from the zest of locally-sourced lemons.

Limoncello Passion Spritz

40mL wildbrumby limoncello
20mL passionfruit pulp

The Limoncello Passion Spritz is best enjoyed under full sun with good music on full blast! (And, hopefully, with a few friends… even if it’s just over zoom).

You can build this cocktail straight into your glass – no bar shakers and no clean-up afterward. First, add our wildbrumby limoncello and the passionfruit pulp to a large wine glass. Top with 90mL of wildbrumby brut and a splash of soda water. 

Lastly, fill your glass to the brim with ice. Want to keep your spritz flavourful till that last, golden drop? Then this is the most important step. Adding ice last ensures your spritz is evenly mixed and prevents it from diluting before it’s even served. 

Garnish your drink with a lemon wedge and a colourful paper straw for good measure!

Lavender Limoncello Sour

30mL wildbrumby limoncello
30mL wildbrumby classic gin
20mL lavender simple syrup
20mL lemon juice
15mL aquafaba

Springtime is all about florals and vibrant flavours. Remember those lemon drop lollies you could only get at small country markets on a Sunday morning? Well, we just put together a cocktail with that exact vibe. 

To prepare your lavender simple syrup add 1 tablespoon of lavender tea, 1/3 cup of sugar and 1/3 cup of water to a small pot. Place on a low heat and stir till most of the sugar has dissolved. Once dissolved, set the pot aside to cool. Strain your sugar syrup into an airtight container. Your lavender simple syrup will keep in the fridge for up to 2 weeks – But let’s be honest, it’ll be gone quicker than that!

To make your Lavender Limoncello Sour, add all your ingredients to a bar shaker with ice and shake thoroughly. You’ll know it’s ready when you see frost forming on the outside of the shaker. Strain your cocktail into a tumbler glass over a large ice cube. Garnish with half a lemon wheel and dry petals of lavender tea.

Lemon loves lavender! But if you don’t have lavender tea handy – try this cocktail with plain simple syrup. Trust us, you’ll love it just as much.

Limoncello Iced Tea

60mL wildbrumby limoncello
chilled chamomile tea
honey (optional)

Lemon and chamomile tea can be comforting on a cold winter night. But have you tried it iced and boozy on a warm sunny day? Well, forget home made lemonade. This is going to be your go-to!

To make 2 servings of this liquid sunshine, you’ll need to prepare 250mL of chamomile tea. Once brewed, allow your tea to reach room temperature and then chill in the fridge for at least 15 minutes.

All chilled? Now you’re ready to build this cocktail straight into a glass. 

Fill a highball glass with ice and place two lemon wheels down the inside of your glass to garnish. Add our wildbrumby limoncello and top with chilled chamomile tea. Serve with a paper straw.

If you’re after a little extra sweetness, add a drop of honey.

Firstly, pack a wide, stemless glass to the brim with lemon wheels, whole raspberries and ice. Pour our rubus patch gin and wildbrumby limoncello into your glass and top with tonic water. We suggest fever tree’s refreshingly light tonic water.

Craft the perfect Bellini at home


You’ve likely enjoyed a Bellini before. Maybe you swapped out a mimosa for one over brunch or enjoyed a few as a summertime aperitif.

But, do you know the history of this near century-old drink?

Sometime between 1934 and 1948, a Venetian Bar owner named Giuseppe Cipriani created the Bellini cocktail – a bubbly peach drink that would be celebrated for decades to come.

Originally, the Bellini cocktail was made with prosecco and peach puree or peach nectar. It’s a combination that creates a stunning pink hue.

The drink’s colour reminded Cipriani of a pink toga worn by a saint in one of Giovanni Bellini’s famous paintings. That same saintly pink colour was used often by the 15th Century artist to paint everything from togas of saints to garments worn by the virgin Mary.

The name ‘Bellini’ feels like an obvious choice for a heavenly cocktail.

In recent years the peach nectar or puree has been swapped out for quality peach schnapps. And whilst the Bellini has lost its notable pink hue, it has only improved in taste!

Wildbrumby peach schnapps is made from peaches grown in the Australian Southern Alps and has received multiple gold awards for keeping true to that delicious, real peach taste. There is no wonder it’s the perfect addition to a cocktail of divine proportions.

How to perfect the Bellini:

We begin with the garnish. I know what you’re thinking. ‘But aren’t garnishes supposed to add a bit of decoration at the END of a cocktail?’

Well, this drink is a little different.

The Bellini cocktail is all about showcasing that fresh peach flavour and the garnish is no exception. First, take a fresh peach and slice out a thin wedge. Keeping the skin on for texture, place the peach wedge into a chilled champagne flute.


If you can get your hands on them, use a white peach. They stay sweeter for longer and add a bit of flair to your glass.

Now, it’s time to add your cocktail ingredients to the champagne flute. For one serving you will need 20mL of wildbrumby Peach Schnapps and 130mL of wildbrumby Brut.

After garnishing your chilled champagne flute with a fresh slice of peach add 20mL of wildbrumby Peach Schnapps. Then, angle the champagne flute on a 45-degree angle and slowly fill the glass with wildbrumby Brut.

Make sure to keep the lip of your wildbrumby Brut bottle close to the champagne flute and straighten the glass as it fills. This will help control bubbles and the brut and schnapps will mix evenly.

Ta da! Your bubbly peach treat is ready to be served.

Why use wildbrumby Brut?

Cipriani’s original Bellini cocktail recipe called for Prosecco. So why do we use wildbrumby Brut?

Well, Brut is actually a type of Prosecco.

It is dryer and less sweet than other types of prosecco or sparkling wine. This makes it the perfect choice in bubbles for the Bellini cocktail for two reasons. Brut doesn’t overpower the drink with sweetness.

Most importantly, the real peach notes that our wildbrumby Peach Schnapps is loved for will remain centre stage till the very last drop.

Spring has sprung and we’re celebrating with a floral, herbaceous and honey-sweet treat – our Dandelion & Honey schnapps.

Incorporating wild, handpicked dandelion flowers and local alpine honey with a base of our Pink Lady Apple schnapps. This is a seasonal schnapps made to be savoured for as long as our dandelions are in bloom.

You may be asking yourself, why dandelion? This vibrant yellow flower is highly aromatic and known as one of the most common edible flowers. 

In teas and drinks, dandelion gives off a rich herbaceous and floral flavour often served alongside honey and lemon.

Local alpine honey is a key ingredient in our Dandelion & Honey schnapps too.

As bees busily venture from plant to plant, the taste of the snowy mountains in spring is collected into each drop of their gorgeous golden honey.

For us, the vibrant notes of wildflowers and local alpine honey are the true flavours of spring. So, where does the idea of floral schnapps come from?

Herbs and flowers, like dandelion, have a long history in liquor creation. Particularly in Western Europe where many traditional alcoholic beverages consumed in springtime, and beyond, are herbal liqueurs and aromatised fortified wines.

How to make the Angry Bee:

Soda Water
An edible flower

Fill a highball glass with ice and pour in our wildbrumby Dandelion & Honey schnapps and fresh lemon juice. Stir in ingredients and top with high-quality soda water.

Want to make this drink extra special? First, add ice to your highball glass and fill it halfway with soda water. To a cocktail shaker, add ice, fresh lemon juice, our wildbrumby Dandelion & Honey schnapps and shake well.

Using the cocktail shaker will thoroughly mix these ingredients and creates a soft texture that tastes phenomenal and is sure to impress your friends.

Strain the contents of your cocktail shaker into your highball glass and top with extra soda water if needed. Garnish with your favourite edible flower – our pick is the dandelion, of course!
